/&gt;&lt;/span&gt;Pique os dentes de alho e a malagueta e deite-os numa panela com água temperada com sal. Levam-se as carnes bem lavadas a cozer nesta água, para depois serem desfiadas e/ou cortadas em bocadinhos muito pequeninos. Corte o pão em fatias e escalde-o na água da cozedura a ferver, passando-o depois pelo passe-vite ou por um passador de rede. Coloque-as num recipiente tapado, para não secarem. Junte as carnes juntando o restante alho picado e o pimentão doce, regue com azeite quente e mexa muito bem. Encha com este recheio as tripas de vaca já arranjadas e ate dos dois lados. Ate depois um lado ao outro com cada uma das pontas, formando um enchido, deixando fio para atar ao fumeiro, onde devem ficar 3 semanas, pelo menos. Antes de as assar ou fritar, devem ser picadas com uma agulha ou um garfos, para não rebentarem. &lt;span style="color:#ff6600;"&gt;BOM APETITE.&lt;/span&gt;&lt;/p&gt;&lt;p Coza as batatas descascadas com a cebola, o chouriço e os dentes de alho em litro e meio de água temperada com o sal e metade do azeite. Retire o chouriço, esmague tudo o resto e leve novamente ao lume. Assim que estiver a ferver adicione a couve. Deixe cozer com o recipiente destapado só o tempo suficiente para a couve deixar de saber a cru. Verifique o tempero e adicione o resto do azeite. Corte o chouriço em rodelas, distribua-as pelos pratos e regue com o caldo-verde.
